Crunchy Carrot and Chickpea Salad

Ingredients:

4 large carrots

1 tin cooked chickpeas, drained

1 tbsp. raisins

2 tbsp. coriander

1/2 lemon juiced

1 tbsp. extra virgin olive oil

A pinch of sea salt

A handful of fresh rocket/greens

**Mix together carrots, chickpeas, raisins, rocket/greens and coriander.

**Mix lemon, oil, salt………add dressing to salad and enjoy!
